Ground Beef with Ginger Thai Peanut Sauce Recipe

This recipe is quick and easy and packed full of flavor!

Ingredients
  

  • 2 tbsp avocado oil
  • 2 pounds ground beef
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 large shallot finely diced
  • 2 cloves garlic minced
  • 1 inch knob ginger peeled and finely grated
Sauce:
  • 1 TBS honey
  • 1/3 cup nut butter I used SunButter
  • 1/4 cup coconut aminos
  • 1 tbsp rice vinegar
  • juice of one lime
  • 1 TBS siracha leave out if sensitive to spice
  • 1/2 tsp salt plus more to taste
  • ½ tsp toasted sesame oil
Base and Toppings:
  • Rice or cauliflower rice
  • Fresh Mint Leaves
  • Fresh Thai Basil Leaves
  • Green onions thinly sliced
  • Fresh Cilantro Leaves

Method
 

  1. To a large skillet over medium to medium-high heat, add avocado oil and then ground meat to the hot oil. Brown ground beef using a spoon or meat masher to break the meat into smaller pieces.
  2. Once the meat is fully cooked, add in the diced shallots, minced garlic, and grated ginger. Stir to evenly combine and heat for 30-60 seconds.
  3. In a small saucepan, over low to medium heat, add all of the remaining ingredients (labeled sauce). Over low heat, slowly soften the nut butter and stir until fully combined, about 2-3 minutes.
  4. Pour the sauce over the ground meat and stir to combine. If needed, add a little water or broth to thin the sauce, just 1-2 TBS at a time. Note: As suggested above, you can also serve the sauce on the side and allow everyone to build their bowl. If going this route, I suggest doubling or tripling the sauce part of the recipe. Everyone seems to be a little heavy-handed with their sauce pours.
  5. Serve in lettuce cups or with rice or cauliflower rice in bowls. Top with desired herbs and enjoy!
