Patriotic Pinwheel with Strawberries and White Chocolate

These are the cutest treat for Memorial Day, 4th of July or Labor Day!

Ingredients
  

  • 1-12 ounce package of white chocolate chips
  • 1 large package of strawberries about 25 strawberries
  • 1 package of patriotic sprinkles
  • Popsicle sticks
  • Avocado oil optional

Method
 

  1. Cut strawberries. You will remove the stem from the strawberry and then cut off and remove the top portion of the strawberry creating a flat surface.
  2. Cut strawberry centers - Continue slicing to create strawberry circles for the center of the starburst. Repeat until you have 8 strawberry circles.
  3. Cut limbs or arms of strawberry stars – Place strawberries on a flat end and slice strawberries into fourths. Keep the center two slices and reuse the outer two pieces for another recipe or snack. You want both sides of the strawberry slices to be flat. Repeat until you have 40 arms or limbs.
  4. Using a double boiler or microwave, heat white chocolate. Stir frequently to prevent burning. If the chocolate begins to seize up, add 1 TBS of avocado oil at a time until the white chocolate regains a smooth and pourable consistency.
  5. On a large baking sheet lined with paper towels, place each strawberry slice flat side down. The paper towels will help absorb any moisture. This will reduce the macerating effect that happens when the strawberry slices touch the sugar in the white chocolate.
  6. On a large baking sheet lined with parchment paper, place one heaping tablespoon of the melted white chocolate. Note: You will want to be sure that your placement of the melted white chocolate allows for enough room to arrange the strawberries.
  7. Place a popsicle stick on top of melted white chocolate.
  8. Place the strawberry center circle in the middle of the white chocolate, pushing down to spread out the white chocolate.
  9. Arrange strawberry arms/limbs to resemble a star shape with five points. Be sure that the base of each strawberry star arm/limb is touching the melted white chocolate. This is the key to getting everything to hold together. Add more white chocolate if needed to get everything to adhere together.
  10. Pour the remaining melted white chocolate into a piping bag or the corner of a Ziplock bag. I find it’s easiest to do this by placing the piping bag or Ziplock bag in a tall, skinny glass. Pour the white chocolate in. Cut a small portion of the tip off the bag and drizzle white chocolate over the strawberry star shape. Caution: If the white chocolate is still very hot, the temperature may burn your hand or melt the bag. If needed, wait 5-10 minutes to allow the white chocolate to cool slightly before proceeding with this step. You still want the melted white chocolate to be warm for this step.
  11. While the white chocolate drizzle is still wet, sprinkle patriotic sprinkles on top.
  12. Place in the refrigerator for about 30 minutes until the white chocolate has set.
  13. Enjoy immediately! Once the strawberries touch the white chocolate, they may start macerating (emitting juices).
