Watermelon Brownies

These brownies are such a fun summer treat and so easy to make! You can use any brownie mix or recipe to suit your dietary needs.

  1. Preheat oven according to brownie mix instructions.
  2. Generously grease 8-inch round pan, and add a circular parchment paper insert.
  3. Make and bake brownie mix according to instructions.
  4. Cool completely and carefully remove from the 8-inch pan. See above for troubleshooting tips for easy removal. You will want to remove by putting a plate on top of the opening in the pan, and then flip over.
  5. Remove parchment paper from the bottom of the brownies, which should be facing upwards. Invert onto a plate and then slide onto a serving tray so that the top of the brownies is now facing up.
  6. Dividing brownie into six equal pieces similar to a traditional pie or pizza shape, also as shown in pictures throughout this blog post.
  7. While the brownies cool, divide the frosting into three portions containing half of the frosting, one quarter, and another quarter increment. Add red food coloring to the half-sized increment. Keep one-quarter of the frosting white and add green to the other quarter. Put all frosting in individual piping bags.
  8. Use green, white, and red icing to create a watermelon look per the shown photos. Sprinkle a few mini chocolate chips on each slice.
