Summer Fruit Salad with Easy Honey-Mint Dressing

Enjoy this refreshing summer salad with a delicious and light homemade dressing!

Ingredients
  

Salad
  • 5 oz package arugula
  • 1 quarter watermelon cubed
  • 2 nectarines sliced
  • 10 fresh strawberries sliced
  • 1 cup green grapes sliced
  • 1/2 cup blueberries
  • 1/2 cup feta cheese optional
Dressing
  • 1/4 cup apple cider vinegar
  • 3 TBS honey plus more to taste
  • 10 fresh mint leaves
  • 1/2 cup olive oil
  • 1/2 tsp salt

Method
 

  1. In a large bowl, add the arugula and then layer in the prepared fruits. If you using, sprinkle feta cheese on the top or serve on the side.
  2. In a mason jar, add dressing ingredients and use an emulsion blender to fully combine.
  3. Pour the delightful dressing over the salad or serve on the side.

Notes

Dressing - In lieu of apple cider vinegar, you may substitute with freshly squeezed lime juice, orange juice, lemon juice or any combination of the citrus juice.
