You can use this same method if you are wanting to provide a healthy dessert option.  Set the actual salad out with the main portion of the meal, and then set out the delicious fruit salad when it’s time for dessert.  So many people like to have some fresh fruit as their dessert or add to warm cobbler to brighten it up.

Summer Fruit Salad with Easy Honey-Mint Dressing

  • 5 oz package arugula
  • 1 quarter watermelon cubed
  • 2 nectarines sliced
  • 10 fresh strawberries sliced
  • 1 cup green grapes sliced
  • 1/2 cup blueberries
  • 1/2 cup feta cheese optional


  • 1/4 cup apple cider vinegar
  • 3 TBS honey plus more to taste
  • 10 fresh mint leaves
  • 1/2 cup olive oil
  • 1/2 tsp salt


  • In a large bowl, add the arugula and then layer in the prepared fruits. If you using, sprinkle feta cheese on the top or serve on the side.
  • In a mason jar, add dressing ingredients and use an emulsion blender to fully combine.
  • Pour the delightful dressing over the salad or serve on the side.


Dressing – In lieu of apple cider vinegar, you may substitute with freshly squeezed lime juice, orange juice, lemon juice or any combination of the citrus juice.
