This chocolate peanut butter chia seed pudding has quickly become a favorite, grab-and-go breakfast in my family. There is just something so fabulous about that chocolate and peanut butter combination that comes together to create a smooth and creamy pudding. Made with just a few simple ingredients and by prepping the night before, you can serve your family a delicious breakfast packed with protein and healthy fats with no refined sugar.
Healthy Breakfast or Sweet Treat

- Chocolate Collagen Powder – What gives this chia seed pudding its rich, chocolate flavor is this chocolate collagen powder. With 18g protein per serving, no sugar, and grass-fed collagen, this is my preferred brand.
- Unsweetened Nut Milk – You can use any nut milk of your choice. Cashew milk, coconut milk (boxed), or almond milk all work well. The key here is to use unsweetened nut milk to keep this recipe free from added sugars. If all you have on hand is a nut milk with added sugar, that’s fine, you will probably just want to reduce or eliminate the maple syrup.
- Peanut Butter – You can use any nut butter or seed butter that you like for this recipe. Peanut butter is delicious, but almond butter, cashew butter, and sun butter are all great options.
- Maple Syrup – You can also use honey for this recipe.
- Vanilla Extract – When it comes to vanilla extract, it’s always important to use a high-quality vanilla extract. I have found that the absolute best vanilla extract comes straight from Mexico. However, so many of the extracts that come from Mexico are sold in plastic bottles. I have been using this Mexican vanilla extract for several years and it comes in a glass bottle.
- Fresh Berries – You can top this chia seed pudding with any of your favorite fresh berries or fruits. Strawberries, blueberries, blackberries, and raspberries are all fabulous topping options. - Granola – This Bee Free Warrior Mix paleo granola has quickly become a favorite in our family. It’s kind of like granola and an oatmeal cookie had a baby. Since it’s paleo, it’s made with clean ingredients and filled with healthy fats. The perfect way to top off your chia seed pudding.
Storage
- The best way to store this chia seed pudding is in individual, 8-ounce mason jars. This way, you truly have a grab-and-go breakfast, snack, or dessert options ready to go. You can store this chia seed pudding in an airtight container or tightly cover it with plastic wrap. The pudding will keep in the refrigerator for up to 5 days. Just be sure to give the pudding a good stir before serving to redistribute any ingredients that may have settled.
- If you are going to make ahead individual chia seed cups, be sure that you store the chia seed pudding, fruit, and granola separately so that everything doesn’t get soggy. After washing and drying the berries, you can store them in a glass container with a paper towel in the bottom. This should keep them fresh for a few days. When I am running out the door, I like to toss a handful of berries on top of the chia seed pudding as well as a scoop of the granola.

- 2/3 cup chia seeds
- ½ cup chocolate collagen powder
- 2 cups unsweetened nut milk
- 2 tablespoons peanut butter
- ¼ cup maple syrup
- 1 teaspoon vanilla extract

Instructions
- Add all chia seed ingredients to a bowl and whisk until combined.
- Refrigerate until pudding has thickened, about two hours.
