Grain-Free Chicken Taquitos with Avocado Cilantro Lime Crema
When I first started the Autoimmune Protocol (AIP), I found myself craving the bold flavors of Tex-Mex cuisine. Determined to satisfy my cravings while sticking to the protocol, I got creative in the kitchen and developed this delicious AIP Grain-Free Chicken Taquitos with Avocado Cilantro Lime Crema. Little did I know that this dish would become an instant hit with my entire family!
The best part about this recipe is its simplicity. You can whip up a batch of these comforting taquitos in no time, especially if you use pre-cooked rotisserie chicken or shredded chicken that you have on hand. Grain-Free Chicken Taquitos with Avocado Cilantro Lime Crema
Ingredients
- 3 cups shredded chicken
- 1 zucchini diced
- 1 bell pepper deiced
- ½ white onion diced
- 1 tsp onion powder**
- 1 tsp garlic powder**
- 1 tsp oregano**
- ¼ tsp turmeric**
- ½ tsp salt**
- 6 grain-free tortillas
Optional Toppings:

- Cilantro
- Avocado Slices
- Guacamole
Instructions
- Add zucchini, bell peppers, onion and all spices to a saute pan.
- Saute over medium-high heat until veggies begin to soften.
- Add chicken and stir to combine.
- Heat grain-free tortillas for 10-15 seconds each in a hot pan (or a microwave) until soft and pliable. This is a key step. If you skip this step, your tortillas will fall apart when you roll them.
- Add 1/6 of the chicken and veggies mixture to each tortillas, and roll them up, placing on the baking sheet, seem side down.
- Spray the outside of the rolled tortillas with cooking spray.
- Bake at 350 degrees Fahrenheit for 15-20 minutes until the tortillas are golden brown.
- Garnish with your favorite toppings!
Notes
- **This recipe was originally designed for people on AIP. If nightshades are tolerated, you can substitute 1 TBS of your favorite taco seasoning for all of the seasonings listed above with a double asterisk.
