Gluten-Free Mini Fruit Pizzas with Cream Cheese Frosting
This delicious and simple summer dessert is sure to be a crowd favorite! By using pre-packaged sugar cookie dough, you can customize this recipe to your dietary needs while saving time in the kitchen.
You can use whatever fruit you like for this dessert. I personally love the red, white, and blue visual appeal of using only berries, but that is just a matter of personal preference! Whatever fruit combination you use, this dessert is sure to be a hit this summer!

Simple Ingredients
- Fresh Fruit – To give these a patriotic look, I went with sliced strawberries, blueberries, raspberries, and blackberries. Kiwi is another great option for these mini fruit pizzas. Be sure that your fruit is washed and dried before placing it on the cookies.
- Sugar Cookie Dough – To keep this recipe as clean as possible, I used Cappello’s gluten-free sugar cookies. Sweet Loren’s makes a nice, gluten-free, and dairy-free sugar cookie.

Storage
Unless you are eating the cookies the same day, I recommend storing the cookies, icing, fruit separately in airtight containers.
When fruit and sugar combine, it creates an effect called macerating. This is when the sugar combines with fruit to give up fruit’s natural sugars creating a beautiful fruit juice. While I love this technique for certain desserts, you do not want your mini fruit pizzas to have macerated fruit on top or they will get soggy. To avoid this, make the cookies that you or others will eat the day of and store the remaining ingredients in separate components.

Instructions
- Wash, dry and slice the fruit.
- Bake the sugar cookies according to package.
- Make the dairy-free cream cheese icing.
- Assemble cookies by piping desired amount of frosting on each cookie and then arranging fruit on top.
