Lemon Avocado Dressing
This salad dressing was inspired by one of my favorite salad dressings from Flower Child. I love this thick and creamy dressing for a hearty salad. This dressing is refreshing and creamy with the perfect hit of citrus from the fresh lemon juice.
I like to drizzle this dressing over some crisp Romaine with grilled chicken, bacon, and tomatoes for a somewhat deconstructed cobb salad. Another favorite way to enjoy this dressing is on top of some crunchy kale with shredded cabbage and carrots, roasted slivered almonds, dried cherries, rotisserie chicken, and avocado slices. And of course, this is such a refreshing way to enjoy veggies. If going this route, I would add just a tablespoon or two of water (instead of half a cup) to keep the dressing extra thick and creamy for when you dunk your favorite veggies. Sliced bell peppers, cucumbers and carrots are all fabulous in this dip.
Storage
This dressing will stay fresh in the refrigerator for 2-3 days.

Lemon Avocado Dressing
Ingredients
- 1 large avocado
- 2 lemons juiced (about 2 TBS)
- 3 TBS avocado oil
- 2 TBS honey
- ¼ tsp salt
- Water**
Instructions
- Put all ingredients except water in a food processor or blender and combine fully
- Add water until dressing reaches desired consistency. **Note: I like my dressing thick and creamy and find that about 4 TBS of water works well for my preferred texture. But you can add as little as 2 TBS of water or as much as ½ cup of water to get your desired consistency.
