AIP Cilantro Lime Cauliflower Rice

This cauliflower rice has become a staple in our household.  The biggest compliment I got with this recipe is when my husband asked why I was eating regular rice, while I was on AIP.  So yay for cauliflower rice that tastes like the real thing!

Simmering the cauliflower rice in coconut milk gives it such a rich and creamy texture.  Finishing it off with fresh lime juice and cilantro really brightens it up.

AIP Cilantro Lime Cauliflower Rice

Ingredients
  

  • 2 TBS coconut oil
  • 16 ounces 2 cups cauliflower rice
  • ½ tsp salt plus more to taste
  • ¾ cup full-fat coconut milk from a can
  • 1 lime zested
  • 2 limes juices
  • ¼ cup cilantro

Instructions
 

  • Over medium heat, saute cauliflower rice and salt in coconut oil for 2-3 minutes until warmed through. This will help bring out the slightly nutty flavor of the cauliflower.
  • Pour coconut milk over the cauliflower rice and stir to combine. Simmer until mostly evaporated, stirring as needed, about 5-7 minutes, to prevent sticking to the bottom of the pan.
  • Add lime zest, lime juice, and cilantro.
  • Stir to combine.
  • Taste and add more salt, if needed!
