AIP Cilantro Lime Cauliflower Rice
This cauliflower rice has become a staple in our household. The biggest compliment I got with this recipe is when my husband asked why I was eating regular rice, while I was on AIP. So yay for cauliflower rice that tastes like the real thing!
Simmering the cauliflower rice in coconut milk gives it such a rich and creamy texture. Finishing it off with fresh lime juice and cilantro really brightens it up.

Ingredients
- 2 TBS coconut oil
- 16 ounces 2 cups cauliflower rice
- ½ tsp salt plus more to taste
- ¾ cup full-fat coconut milk from a can
- 1 lime zested
- 2 limes juices
- ¼ cup cilantro
Instructions
- Over medium heat, saute cauliflower rice and salt in coconut oil for 2-3 minutes until warmed through. This will help bring out the slightly nutty flavor of the cauliflower.
- Pour coconut milk over the cauliflower rice and stir to combine. Simmer until mostly evaporated, stirring as needed, about 5-7 minutes, to prevent sticking to the bottom of the pan.
- Add lime zest, lime juice, and cilantro.
